Make the First Dial-In Move
Choose the correct first adjustment when an espresso reaches target yield too quickly.
First test shot before the doors open. 18.0 g dose, 36.2 g yield, 18 seconds. The cup is sharp, thin, and sour. What is the strongest next move? Grind a little finer, purge retained grounds, keep 18 g in and 36 g out, then taste again. Correct. Dose and yield already match the recipe, so grind is the clean lever for slowing flow and increasing contact time. Raise the dose to 20 g so the puck is deeper and the shot slows down. Weaker. Dose is the recipe anchor and should mainly change when you want more or less espresso…
