Corrective Action Is Not Just Fixing the Food

Write a complete corrective action after a critical-limit deviation.

A deviation is not closed until the product, process, and record are all controlled. The teach HACCP Principle 5 prevents improvisation. If a critical limit is missed, the plan should already say what to do. Principle 7 makes that action visible later. A note that says 'fixed' is not enough because it does not prove whether unsafe food reached service, why the limit failed, or whether the fix worked.
