Hazard Analysis Is Not a List of Everything Scary

Use severity and likely occurrence to decide which hazards belong in a HACCP plan.

A good hazard analysis earns the hazards it lists. The teach HACCP Principle 1 starts with hazard identification, but it does not stop there. The useful work is hazard evaluation: which hazards are severe enough and likely enough in this process that they need deliberate control? This is why a hazard analysis reads like evidence, not anxiety. It connects the ingredient, the process step, the equipment, the environment, and the consumer to a specific safety outcome.
