COLD-CHAIN-LOGISTICS5 MIN READ

Use HACCP thinking on refrigerated lanes

Apply HACCP logic to identify critical cold-chain controls on a refrigerated food lane.

The move: start with the food safety hazard, then place the cold-chain control. HACCP logic keeps refrigerated logistics from becoming a checklist of equipment settings. Equipment matters, but only because it controls a hazard. For chilled foods, the hazard may be microbial growth, contamination, allergen cross-contact, or loss of product integrity. Hazard analysis asks where harm can occur Walk the lane from receiving through staging, loading, transport, unloading, and customer receipt. Ask where time, temperature, handling, or sanitation could create an unacceptable condition. Critical limits make the control measurable A limit might be maximum product temperature, minimum trailer pre-cool, maximum…
