Use a SIPOC map to diagnose a market bottleneck before changing layout.
The move: treat a market bottleneck as a process before treating it as a layout failure. SIPOC gives you a fast diagnostic lens. Start with Suppliers: who or what feeds the line? Then name Inputs: staff, equipment, signs, products, payment tools, space, and customer information. Next sketch the Process in five to seven steps. Then define Outputs: what the process produces besides the obvious product. Finally, identify Customers: not just the person buying coffee, but everyone affected by the flow.
