Find the balance point in your grip
Explain the mechanism of the pinch grip and apply it to a chef-knife prep task.
The move: steer from the blade balance point. The pinch grip is a control system. Place the thumb and index finger on opposite sides of the blade near the bolster, then wrap the other fingers around the handle. This puts your steering fingers closer to the blade’s center of balance, so the edge tracks more predictably. The grip should not hurt.
