Use Pareto analysis to prioritize bakery waste reduction by frequency or dollar impact.
The reframe: a waste log is only useful when it changes priorities. Many bakeries record waste but still manage it from memory. Pareto analysis turns the record into a ranking. It asks which few categories create the largest share of the problem, then points improvement work at those categories first.
